Sherry Vinegar Braised Chicken with Mushrooms

A savory and hearty dish where chicken is braised in a sherry vinegar and mushroom sauce.

Ingredients:
- 4 bone-in, skin-on chicken thighs
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1/2 cup sherry vinegar
- 1/2 cup chicken broth
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1 tablespoon unsalted butter

Instructions:
1. Season the chicken thighs with salt and pepper.
2. In a large skillet, heat olive oil over medium-high heat. Add the chicken, skin-side down, and cook until browned, about 5 minutes per side. Remove and set aside.
3. In the same skillet, add the onion and garlic, and sauté until softened, about 2-3 minutes.
4. Add the mushrooms and cook until they release their moisture and begin to brown, about 5 minutes.
5. Pour in the sherry vinegar and chicken broth, scraping up any browned bits from the bottom of the skillet. Add thyme and bring to a simmer.
6. Return the chicken to the skillet, skin-side up. Cover and simmer for 20-25 minutes, or until the chicken is cooked through.
7. Stir in the butter until melted and serve hot.
